Ingredients

½ cup almonds

1 cup dried apricots (non-sulfured)

¼ cup coconut

1 tbsp chia seeds

1 tsp vanilla essence

¾ cup puffed amaranth for rolling

 Method

  1. Add almonds to a food processor and chop until a rough powder. Add chia and give a quick blitz.

  2. Add dried apricots, coconut and vanilla and continue to process until a good consistency for rolling.

  3. Roll in puffed amaranth.
