Red Sorghum, Apple and Raisin Slice

A subtly sweet, gluten-free, fibre-rich slice

Crafted with care, this slice is packed with the natural goodness of red sorghum, which offers an abundance of essential nutrients, antioxidants, and dietary fibre. The choice of red sorghum over white offers additional red polyphenols for supporting the microbiome.
To further enhance the nutritional profile of this slice, we have included ground flax, which serves dual purposes. Not only does it help hold the dish together, adding a delightful texture, but it also provides a gentle and wholesome fibre that promotes healthy laxation.

Ingredients

1 ½ cups red sorghum flour

1 cup milk (soy)

1/3 cup olive oil

¼ cup ground flax

1 ½ cups grated apple

1tsp baking soda

1tsp cinnamon

¼ tsp nutmeg

½ cup chopped walnuts

1/3 cup raisins (non-sulphured)

Pinch of salt

¼ cup rice malt syrup

 

Method

  1. Line a slice tray with baking paper and set oven to 180 degrees C.

  2. Mix dry ingredients together in a bowl.

  3. Add in the wet ingredients and stir to combine.

  4. Transfer to lined tray and bake for 25mins.
